Chicken Gnocchi Soup

Alright you Olive Garden lovers…you have to try this recipe for Chicken Gnocchi Soup. It tastes just like the soup from Olive Garden. When I made it, as you see below, it didn’t look exactly like the soup from Olive Garden – it ended up being more yellow for some reason. It tasted amazing though and was very close to the restaurants famous soup.

All of the ingredients.

Chop up the veggies and add to the pot. I grated my carrots and I chopped up the celery, garlic and onion in a food chopper. The kids and I don’t like large chunks of veggies so to ensure they would all eat it I made them really small.

Chop up the chicken. Using an already cooked rotisserie chicken makes it so much easier!

After adding the water, chicken bouillon cubes and chicken, then add the best part – the gnocchi!

Add the spinach and rest of the ingredients. Boil until the soup thickens. It’s smells soooo good!

Serve with an italian salad and just pretend you are at Olive Garden!

Chicken Gnocchi Soup

Ingredients:
2 large carrots-peeled and grated
4 stalks celery-chopped
6 cloves garlic-chopped
1 medium onion-chopped
3 Tablespoons olive oil
1 Rotisserie Chicken + save any broth in the container
8 cups water
8 chicken bouillon cubes
16 ounce package of Potato Gnocchi
1 1/2 cups spinach, chopped
4 cups half and half
1 teaspoon thyme
1/8 teaspoon nutmeg
1 Tablespoon sugar
2 tablespoons butter
1/4 cup cold water
5 tablespoons cornstarch
salt & pepper

Directions:
1. Peel and chop up the onion and garlic. Peel and grate the carrots. Chop up the celery.
2. Pour 3 Tablespoons of Olive Oil in large pot and heat on medium.
3. Add the onion, garlic, carrots and celery. Cook for about 6 minutes on medium.
4. Add 8 cups of hot water into the pot and 8 bouillon cubes and stir together. Bring to a boil.
5. Take the skin off the rotisserie chicken, remove all the chicken from the bones and chop up the chicken and add to the pot.
6. Add any chicken broth that it is the bottom of the container and add to the pot.
7. Add the gnocchi to the pot. Continue to boil for 4 minutes or until the gnocchi float to the top of the soup.
8. Chop up the spinach and add it to the soup.
9. Add the 4 cups of half and half, 2 tablespoons of butter, 2 tablespoons sugar, 1 teaspoon thyme, and 1/8 teaspoon nutmeg.
10. In a separate bowl combine 1/4 cups cold water and 5 tablespoons of cornstarch. Once mixed pour it into the soup.
11. Season with salt and pepper.
12. Bring the soup to a boil until soup thickens.
13. Serve with breadsticks or salad or both!

What’s for dinner?

Let’s talk about my plan to save on groceries these last two weeks. As you may have read I spent $225 on groceries for two weeks worth of dinners on my first try. We ended up not making two of the dinners which I have added to this menu again. I am sure this will happen every once in awhile, no biggie, I will just add it to the next menu. We ended up eating pizza last Tuesday after Karli’s dance class because they have BOGO every Tuesday which we have since decided that until football is over for the boys I will probably pick up pizza every Tuesday. It’s only $12 for two large pizzas, so it’s a cheap dinner and I would rather have pizza on that day rather than a Friday or weekend when I actually have more time to cook.

I did make a trip to the grocery store a few days ago to pick up milk, bread, and a few snacks and I spent $45. In a way that messes with my whole plan to save money, but after two weeks it is still less than what I have been spending. As I said before I was spending about $250 a week if not more if you include eating out. We didn’t eat any McDonalds for two weeks so that was great!

Today I will be getting all the food items for the menu below as well as some school lunch foods and snacks for Chase and Karli. As you can see I like to try some simple dinners and then I add a few new recipes that I would like to try. Also, I think I am going to try shopping at Meijer for once. So many people say they save a lot of money at Meijer and Walmart. I have shopped at Walmart before and usually save quite a bit, so I thought I would give Meijer a try and see how it goes. Unfortunately neither of these stores are that close to me, but since I only have to go every other week it’s not so bad. What grocery store do you seem to spend the least at?

I certainly see a pattern of A LOT of starch in the food we eat. I know I should be substituting a lot of the potatoes with either salad or some other vegetable, but it’s hard because my kids are such picky eaters. There are not very many vegetables that all the kids will eat. They do like salad but I don’t want to have salad every day especially when I try to eat it for lunch when the kids are in school. Not to mention that the cheapest dinners do happen to have a lot of starch in them if you think about it – casseroles, pastas, etc are pretty cheap things to make. Oh well, I’m doing my best!

This pretzel dip is so yummy! You just have to try it. Just mix together 16oz. cream cheese, 8oz. cool whip, 1/4cup brown sugar and a bunch of Snickers bars crumbled up. I promise you will love it!

Open House

Today was Open House for Chase and Karli. They were able to meet their teachers, drop of their supplies, and mingle with their friends after a long summer. (Notice I said long, haha.)

Karli was lucky enough to get the same teacher that Chase had last year. I love when this happens! Now 3 of my kids have had this same teacher…she is one of my many favorites at their school.

Karli Party - Photo Booth Fun!

Karli had a great 8th Birthday party with a bunch of her girlfriends. It was supposed to be a swimming party, but it was so chilly that day we ended up staying indoors. I had a few games planned, but the girls were more interested in running around like wild animals and jumping around on Karli’s bed. Boy, was that a long 3 hours. I set up a makeshift photo booth and I was able to get the girls attention for long enough to take some fun photos. Here are just a handful of my favorites. Saving on groceries…first menu

I had a couple of people email me about my post about cutting back on our monthly food budget. They wanted to know what sort of meals I was planning. It’s been exactly a week since I went to the store with my 2 week menu plan and I have to say we have stuck with it very well. One thing I learned really quickly is I am no longer going to designate certain meals for each day. I am going to make a list of 13 meals (assuming we will eat out just once every 2 weeks) and I can decide that morning what I feel like making for that day. Some days I didn’t include side dishes because I still have quite a few things to pick from laying around the house. I hope to use all this up by the end of the month.

I made just one trip to the grocery store last Monday and I spent $225 for all the things that are needed to make the following dinners. Now mind you I did have some of this stuff already in the house. Such as the hot dogs and burgers buns that were left over from having family over the previous Saturday – that is why those items ended up on the menu in the first place. All of the vegetables I already had as well.

So it is nothing fancy by far since I had very limited time to plan my grocery list this time around. This weekend I plan to do some more digging around online to find some healthier yet cheap meal choices for the next two weeks. Also the fact that I spent just $225 on two weeks worth of meals is pretty darn good considering I usually spend that weekly. I did also buy some breakfast cereals and snack items during this trip so the entire $225 was not just dinners. We are almost out of bread as of today, but everything else is looking well stocked. I hope we can make it until next Monday!!

Video #4 of Can Fat People do the Insanity Workout Series – Restarting Month Two

After a mini break from doing Insanity I have restarted Month Two of the program. It could have been worse, I could have given up completely, but I didn’t! I’m back on track and I’m working hard at doing my workout every day again. It hasn’t been easy with the kids all busy with evening activities. I used to work until like 4 and then do my workout. But now I have to be showered and ready to go to cheer or football by like 5 most days. Twelve more days and the kids are back in school and it will be even easier to keep at a routine. I’m going to run 3 mornings a week when we drop Chase and Karli off at school, eat breakfast and then do Insanity probably around noon. The days I’m not running I’m doing to do Insanity first thing in the morning. Obviously I am not going to make my original goal of losing 70 pounds by my 40th Birthday which is next month beings I have only lost 25 so far this year. But honestly, it doesn’t matter to me. I am just going to keep doing what I am doing and hopefully by November I will look hot enough to wear the thong bikini I just bought for Cancun. KIDDING!!! :-)

Getting my groove back

I started writing about how crazy this month has been and after about 3 paragraphs of how I can’t seem to stay focused and stick to my daily goals I decided to just forget the past and move forward. No one really cares to hear all my excuses, hence the perfect graphic below. I thought of making a video too, but again, who cares to hear about the negative? So fast forward through all the BS and starting fresh with today I am getting myself back on track. So with that being said I am going to force myself to push through the stress of each day and I am restarting Month Two of Insanity tomorrow. Luckily I didn’t gain any weight back over the past couple of weeks. I need to get back to the point where the exercise makes me feel better and I feel as though my day isn’t complete until I have done something to raise my heart rate!

I am also going to get back into planning a menu for each week because we have been spending obscene amounts of money on groceries and eating out. It tends to get even worse this time of year with football and cheer as well as school starting back up in a couple of weeks. We are actually doing better than we did last year in regards to a monthly average, but we are still spending almost twice as much on food than we are our mortgage! And then you add the fact that I need to lose weight just makes me more angry with myself for not being better about our food budget. I actually read some websites that amaze me, like this family of 6 eating on a $100 a week budget! I don’t necessarily think I am going to cut our budget that low, especially not immediately, but it is certainly some good advice and a good place to start. This gal spends even less, but she doesn’t have growing teenage boys in her house either. I also bookmarked CouponMom because I am slightly interested in saving more with coupons. I tried getting into coupons a couple of years ago, but I failed miserably. I won’t spend hours a week trying to save with coupons, but if I can go to CouponMom and look up local deals after I plan my meals, I may be more likely to make time for that. Some of these menu planning sites try to grocery shop for their dinner meals for one month all at once. I am going to just shop for two weeks at a time to start out with and see how that goes. I first have to go “grocery shopping in my kitchen” to plan this weeks menu. I will let you know how it goes and possibly share my menu plans and grocery costs with you as well.

(p.s. I say this every year so there is no surprise when I say…I am so ready for the kids to go back to school and get a normal schedule going again. I can’t wait to start running in the mornings again!)
