Mexican Meatloaf

Mexican Meatloaf

Here is a scrumptious recipe that I wanted to share with you today – MEXICAN MEATLOAF! A friend of mine gave me this recipe and it is such a nice change from the typical meatloaf recipes that I have made in the past.
Watch the video below to see my mad meatloaf making skills because we all know that making meatloaf requires a lot of skill! LOL

MEXICAN MEATLOAF
Ingredients:
1.5 lbs Ground Turkey
1.5 lbs Ground Chuck
3 eggs
3 cups cornbread stuffing
half onion, chopped
2 teaspoons chili powder
1 teaspoon ground cumin
4.5 oz. can of green chilies
16 oz. can of enchilada sauce (I used 19 oz since that is what my grocery store had)

Directions:
1. Mix all of the ingredients together and then add to meatloaf pan.
2. Bake for 45 – 60 minutes on 375 degrees.

Tips:
Serves 6 – 8 people, you could decrease the amount of meat to 1 pound of each for less people and also decrease your enchilada sauce to about 12 oz.

Day in the Life – My Saturday

Karli and I had a Girls Day on Saturday. I love these days where we really have nothing in particular to do so we hop in the car and run to several stores and such.

First we made a stop at the library because we had some books to return as well as Karli wanting to get some more Bad Kitty books. She was so excited to find this one that she couldn’t even wait until we left to start reading it.

Then we went to Lowe’s to stop to get some paint chip samples for an Easter craft that we are doing.

Next was a stop at JoAnn Fabrics for some craft supplies for another Easter craft project. { Video will be posted on our YouTube channel this week! }

And then we stopped at Kroger to get a few things that I needed for Sunday’s Mexican Meatloaf recipe { Video also coming soon! } As well as some treats that Karli added to the cart and some frozen pizzas for dinner because we already ate out for lunch and I try not to cook on Saturdays! Red Baron is our favorite frozen pizza, what’s yours?

We also stopped at Walgreen’s to get some new nail polish and some Reese’s of course!

Our new nails! I tried the magnetic nail polish by Revlon called Star Attraction. The color I used is Star Watch. You apply the polish like normal and then hover the magnetic end over your nail for like 10 seconds and it creates the star like affect.

Karli choose a different Revlon polish that is called Moon Candy which is a dark navy blue polish on one end and then the other end has a light blue sparkle polish which we applied to just the top half of her nails.

We then worked on one of the Easter crafts to create the templates for the video we are making today. It’s a secret what it is until the video comes out!

Then we ended the evening with some vanilla ice cream and oreo flurries with Ken and the boys. We even shared some with the dogs!

Once we got the kiddos to bed Ken watched Breaking Dawn 2 with me…perfect ending to the perfect day!

Must see movies of 2012

Saying I’m addicted to movies is putting it mildly. In 2012 alone I seen at least 55 movies, well at least that is how many I rated on Flixster. Really this is only 1 movie per week, which really doesn’t sound like that many does it?

I thought I would share my favorite MUST SEE MOVIES of 2012 so you can add them to your own rental list. These are the movies that I rated 5 stars and some I have seen more than once.

I do rent some movies on our cable system and others I have rented from Redbox. I also watch some online at various sites available to watch movies that are still in the theatres. I have never downloaded them, I just stream them. Just make sure you have an active antivirus program on your computer because some of these types of sites post links to other sites that are hosting the videos and some may not be safe for clicking. In all the years I’ve been doing this I have never had a problem though.

Here are 10 other movies that I rated 4 stars that I felt were still really enjoyable to watch and I would definitely recommend to others.

Why do I make You Tube videos?

This is my first time participating in the vlog link up – Stop and Smell the Roses at Mandy’s blog – House of Rose. I’ve been so excited this month about my YouTube Channel and the changes here at my blog. I’ve been getting more involved with Pinterest, linkups, Twitter and more and it has really helped my blog traffic and allowing me to meet so many other amazing bloggers. Crockpot Chicken & Dumplings

Another wonderful smelling meal for a lazy Sunday when you want to relax for the day. Just toss together these few ingredients and enjoy a tasty soup. You can make this a creamy style soup or just add more water or chicken broth for a thinner broth. It’s up to you! I do usually end up adding a little bit more broth/water after adding the biscuits.

Crockpot Chicken and Dumplings

Ingredients
3 Tablespoons butter
1 large can cream of chicken soup
3 – 4 cups chicken broth or water with chicken bouillon
onion, diced
carrots, chopped
celery, chopped
2 Tablespoons parsley
Salt and pepper to taste
5 boneless, skinless chicken breasts, cut into small pieces
2 cans of refrigerated buttermilk biscuits

Directions
Add all of the ingredients except the biscuits into your crock pot. Cook on high for 5 hours. Cut the biscuits (uncooked) into small pieces and add to the crock pot. Cook on high for 1 more hour. If you need to add more broth or water to make it thinner you can do so.

Tips
You can use any amount of onions, carrots, and celery that you would like. You can also put the chicken breasts into the crockpot whole and after the 5 hours of cooking you can shred with a fork. I prefer to cut the chicken prior to adding it to the crockpot as it is quicker and less messy!

Warheads Challenge

Chase had seen a video where people were attempting to eat 100 or more warheads and their tongues start bleeding and all this gross stuff. You can go ahead and look those up yourself, you’ve been warned. He said he wanted me to buy some of these so he could see just how sour they were. The true warheads challenge is where you try to eat 150 extreme sour warheads in under 10 minutes. There is no way I was going to let the kids attempt that, but I promised to buy some and let them attempt our own version of the warheads challenge. Let’s call it Kid Edition WarHeads Challenge shall we? We started with 2 bags of warheads, but Andrew found the stash and ate some of them. So we ended up with 22 warheads and 2 kids wanting to participate – Chase and Karli. Of course. The winner would be whoever can hold all 11 in their mouths the longest…

If you are really intrigued…there are all sorts of eating challenges that people are attempting. Crazy fools.

It’s that time of the month…where I share photos I posted on Instagram and Facebook for the month!

This mirror can get a bit dangerous…the one side magnifies x10! I try to use it just for applying makeup rather than examining my flaws.

We finally went to Trader Joe’s (the closest one is about 45 minutes from us). I have to say I wasn’t all that impressed. Even the food we did buy and have eaten was just okay. I don’t see myself going back anytime soon.

Bath & Body Works Haul

Is your head spinning yet from all the different types of videos I have been making? Let’s just say I am trying to get a feel for what sort of videos I enjoy making most. Remember I have been a fan of watching videos on YouTube for the past 3 – 4 years and have spent hours watching some of my favorite vloggers create great quality content that is almost more fun to watch than television! I’m like the new kid in school trying to figure out where I fit in. I’m not quite sure what type of videos I want to make regularly so until then you will be getting all sorts of stuff from me.
