Video #3 of Can Fat People do the Insanity workout series

Update #3 on the video series… today I tell you about my results and opinions on the first month of the Insanity Program. I talk about the workouts that are included in the first month – Plyometric Cardio Circuit, Core Cardio and Balance, Cardio Power and Resistance, Cardio Abs and Pure Cardio. I’ve enjoyed the first month so far. I would have hoped my results included more weight loss for as hard as I am working out, but I am trying hard to be patient and have faith! Second month starts Monday, I hear it’s much harder…Yikes!

We went to a Mud Hens game with Chase’s baseball team on the 3rd of July. They had a really nice fireworks show afterwards. It was so darn hot and it rained so hard they had to delay the game for awhile, but we still had a great time.

Ken and I had a night out without the kids a few weeks ago. First we went to Ken’s aunt and uncle’s 50th anniversary party and then we headed to a new casino not too far from us. We have gone to the casinos in Detroit a few times, but this one is closer and was actually really nice. We played for a good couple of hours and only lost $50. We never win big!

I bought the dogs new beds not too long ago and when we leave for long periods of time I make sure all the beds are in the kitchen because I don’t let them roam throughout the house anymore since we got new carpet. I find it just a little odd that there are 3 beds to pick from and the largest dog chooses the smallest bed to lay in. WEIRDO!!

This month was really hard when it came to planning meals. Ken recently hopped back onto the weight loss bandwagon and I have been trying so hard to eat healthy since I have been doing the Insanity workout. When it came to feeding the kids they either didn’t want what we were eating or they were begging for the typical crap food we used to eat all the time. One plus is I am literally addicted to McDonald’s Southwest Grilled Chicken salad so I’ve been eating that like twice a week when the kids are craving chicken McNuggets. My goal was to still cook somewhat normal healthy dinners for everyone, but to have enough breakfast and lunch foods for the kids to fend for themselves. I made a trip to Kroger and stocked up on frozen breakfasts, croissants, single serve mac and cheese and lunchables. Maybe this seems bad, but try taking care/feeding 4 kids who all wake up at different times and get hungry at different times all while trying to work.

We had our pool liner replaced for the second time since we had our pool installed 10 years ago. The first liner was replaced 5 years ago when our neighbors swing flew into our pool and tore a huge hole into it. Then a few weeks ago we found a spot where the liner had a hole and the vermiculite was washed away and we were slowly losing water. Thank goodness for homeowners insurance! For as much as we pay it’s nice when they have to pay for something.

I thought for sure it would take days for the water to warm up, but the kids were jumping in while the pool was being filled! Brrrr…

Fruit Pizza

Sugar cookie, cool whip, cream cheese and fruit make up this yummy dessert. This is probably my kids all time favorite treat and the pan always comes home empty when bringing to gatherings. You can add any type of fruit that you wish so every time it tastes a little different! Try bananas, strawberries, kiwi, blueberries, grapes, and raspberries. Plus, since there is fruit, this counts as a healthy dessert, right?

Fruit Pizza

Ingredients:
1 package refrigerated sugar cookie dough
1 pk (8oz) cream cheese
1/3 cup sugar
1/2 teaspoon vanilla
1 container (8oz.) cool whip
fruit of your choice

Directions:
1. Spread dough evenly across a pizza pan or baking pan.
2. Cook dough according to package directions. Let completely cool.
3. Mix together the cream cheese, sugar, vanilla, and cool whip.
4. Spread mixture across entire cookie.
5. Cut up fruit and add to top.
6. If using bananas, dip them in lemon juice or orange juice to prevent them from turning brown.

Chill until serving. Cut into slices or squares.

Redecorating our plant shelf

After remodeling our kitchen and family room we had to redecorate our plant shelf in our foyer to blend more with the new decor. Previously we had various antique items on the shelf that we just had to put up in our attic because God forbid we get rid of anything that might be of value. LOL, Ken loves to SAVE things, that is all I’m saying about that. We actually have items saved for our future grandchildren. Okay, honestly I think that is sort of sweet. Think of how many times you tell your kids about certain toys and things you had as a child that you wish you had kept for them. Anyways…

We started with this idea of the large glass vase that we had seen at a restaurant. Ken picked up some rocks from a landscaping store and we found the wooden sticks at Michaels craft store. We also found the plant and plant basket at Michaels as well. Funny thing was Michaels had the exact plant with the exact basket already put together for $160. The store also carried the plant and basket separately for $100 less! We of course snatched them up, along with a bag of moss and put it together ourselves.

We made a stop at Pier One and I found this awesome basket type vase and bamboo sticks that I really liked.

I told Ken that I wanted some sort of animal, like a tall giraffe or something african looking. Pier One had an elephant that was really cool looking but wasn’t exactly what I had in mind. They did have a giraffe that was cute so we put it on hold in case we didn’t find anything else we liked. Then the salesgirl showed us a picture of another giraffe that we could order. I loved it and I loved it even more when we picked it up. It’s exactly what I had in mind. Redecorated plant shelf

To finish up we made a trip to Hobby Lobby for just a few more things. We weren’t sure exactly what we wanted to get but they have such a great selection I knew we would find something. We ended up purchasing the zebra chest, the african mask, and the crazy looking african dude. I think it all came together perfectly and I love my new plant shelf!

I’m (almost) a Runner

I have developed a pretty bad habit of staying up really late and then sleeping in the next day. In a way I don’t really think it’s that big of a deal since I am awake the same amount of hours per day regardless of the time I get up. Well that is what I am telling myself anyways. Today was no exception. After waking up and cuddling in bed with Karli, Ken, and the pups for awhile I think it was almost 11am when I rolled out of bed.

I came downstairs and cleaned up the kitchen and then played with the dogs for a bit. It felt great to not have a darn thing to do today. Sure I could clean the half inch of dust off my family room tables or carry the clean clothes upstairs, but nah… I deserve a break, right?

Finally I thought that it was time to get up and make a plan for the day. I wasn’t in the mood to do the Insanity workout today. I had already decided that I was going to take today off and do the workout Sunday instead. So while Ken was on the elliptical I jumped on the treadmill for a bit. I ended up running/walking a mile and then I hopped on the elliptical when Ken was done. I found this really awesome app called BeatBurn Elliptical Trainer and it was amazing! You can customize the app with your height and weight as well as coordinate with the resistance settings on your elliptical. I tell you what, the app was great because it pushed me to up the resistance way more than I normally would. It seemed to push me just enough too… it wasn’t impossible, but a really hard workout. It plays music to go along with the speed you are to maintain and it really does help. I had choose the intermediate level and I burned just under 500 calories in 30 minutes.

So then I had this burst of energy or some sort of crazy notion that I was going to get back on the treadmill and push myself to run as long as I could. I was only running at a 4.5 mile per hour pace so I wasn’t pushing myself real hard since I was going for distance, not speed. About 5 minutes in of running I got this feeling of ease come over me. Finally I had that feeling that runners talk about, where it feels good and you feel like you could go on and on and on. I had a good rhythm going and I continued to stare at the same thing across the room and I kept focusing on positive thoughts. When I felt like I was getting out of breath I just took a deep breath so I could to fill my lungs with fresh oxygen. (Got that tip from Shaun T, holla!) Once I reached the half mile mark I felt great and truly thought I could make it one mile with no problem at all. I felt fine, no pains and my breathing was manageable. Right about when I got to .67 of the mile I had to slow down. I had ran 10 minutes without stopping and once I had seen that I made a jerk reaction to slow down. Honestly I don’t think I gave my brain enough time to talk myself out of slowing down. I slowed down for only 1 minute and then started running again. I managed to run the rest of the mile, it felt great! Of course when I was done I was mad at myself for not pushing myself harder, but it was a huge accomplishment. I haven’t ran for that long (without stopping) since high school. I am certain that I will be running a mile nonstop in no time!!

Insanity Workout Results – Week #2

Homemade Chicken Chunks

Every since I tried this recipe for chicken chunks (aka boneless chicken wings) the boys beg me to make it pretty much every week. I use a large bag of frozen chicken breasts from Kroger, the 3 pound bag, and everyone chows every last bite. We dip them in a basic ranch or Anchor Bar medium wing sauce as well as this yummy Southwest Ranch dip I found at Kroger a couple of weeks ago (Kroger brand). You have to try this recipe, I promise you it’s one meal you won’t have any leftovers!

Chicken chunks recipe

The recipe is from Blog Chef and I just found a recipe for Teriyaki Chicken Wings. I was addicted to Hooters Teriyaki boneless chicken wings for like 5 minutes…until I seen they are like 700 calories for 10 wings. Wow! I’ll have to let you know how the Teriyaki ones turn out once I try them.

Boneless Chicken Wings

Ingredients:
3 boneless skinless chicken breasts, cut into 1” chunks *I use 3 lbs chicken to feed 6 people
Oil, for deep frying
1 cup all purpose flour
2 teaspoons salt
½ teaspoon ground black pepper
½ teaspoon cayenne pepper
¼ teaspoon garlic powder
½ teaspoon paprika
1 egg
1 cup milk

Directions:
1. Heat oil in a deep-fryer to 375 degrees. In a large bowl combine flour, salt, black pepper, cayenne pepper, garlic powder, and paprika. In a small bowl whisk together egg and milk. Dip each piece of chicken in the egg mixture, and then roll in the flour mixture. Repeat so that each piece of chicken is double coated. Refrigerate the breaded chicken for 20 minutes. (*Sometimes I don’t have time to refrigerate before cooking and they still turn out just fine.)

2. Fry chicken in the hot oil in batches until the outside is nicely browned and the juices run clear (about 5 minutes per batch). Drain on paper towels. Repeat until all of the chicken is gone.

3. Mix fried chicken bits with your favorite wing sauce or serve your own sauces on the side.
