Tuscan Chicken Milano & Broccoli Cheese Soup

Another yummy dinner! The Tuscan Chicken Milano was so tasty except that I put a wee bit too much salt in it. I have a habit of overdoing it when it calls for “salt and pepper to taste”. Oopsies! It was still really good…it tasted like something I would order at the Olive Garden. The broccoli cheese soup was so easy to make and Chase claimed that it tasted better than McDonald’s Broccoli soup! Nevermind that that McDonalds soup is broccoli cream soup…not cheese, but who cares. I love soup…I could eat it year round no matter how warm outside. For this recipe I had to puree the broccoli in a blender and that made me feel like a real cook. LOL!

I think next time I would consider adding some vegetables in the mix and definitely more mushrooms.

It was good, but I don’t see me making it again anytime soon. Next time I won’t blend the broccoli quite so much. I like my broccoli a bit more chunky in soups.

I will have to try the soup. It sounds and looks very tasty. I too, love soup. My fav. is …..ANY! Hee-hee.Although, Egg drop soup is a little weird. I also love things made with a lot of Garlic. (I bet my husband would prefer I didn’t! Also, I bet we couldn’t find one person on this planet that doesn’t love Olive Garden’s Soup and Breadsticks.

Thanks! Yesterday was suppose to be Spaghetti made with italian sausage but I was so sick of pasta, plus it was a busy evening. So I ended up picking up a freshmade deli pizza from Wallymart :)
As for today, Ken is making the boys Grilled Salmon which I don’t care for so I am trying a new recipe for a Tuna Noodle casserole that calls for cheese as well! Should be good, I will share if we like it! We are on Spring Break now and the weather is going to be so terrible it will be a great week to try out some more new recipes.
